By the initiative of the “National Agrarian Science and Educational Center” JSC, all subsidiaries of the Center conduct online consultations for farmers during the quarantine period.

Thus, the Kazakh Research Institute of Processing and Food Industry during the quarantine period conduct online seminars with leading scientists and young specialists of the Institute. On May 12, 2020, scientists of KazRIPFI conducted a live broadcast dedicated to one of the promising sectors of the processing industry - the dairy industry.

The Kazakh Research Institute of Processing and Food Industry is subsidiary of the “National Agrarian Science and Educational Center” JSC and is the leading scientific institution in Kazakhstan that solves the problems of the processing and food production of the agro-industrial complex.

During the online seminar, the speaker was Tultabayeva Tamara Chumanovna, Doctor of Technical Sciences, Professor, academician of the Academy of agricultural sciences of the Republic of Kazakhstan. Tamara Tultabayeva made a presentation “Prospects for processing mare's milk in Kazakhstan”, and also spoke about the prospects for processing camel milk.

Professor Tultabayeva T.Ch. is the head of the laboratory "Technology for processing and storage of livestock products", the head of grant projects of the Ministry of Education and Science of the Republic of Kazakhstan and the PAF Ministry of Agriculture of the Republic of Kazakhstan. Professor Tultabayeva T.Ch., graduated from the Semipalatinsk Technological Institute of the Meat and Dairy Industry, with a degree in milk and dairy products process engineer, after graduation she worked in production.

The speaker noted that milk and dairy products are specific and important part in human nutrition, being a constant and most important source of most vitamins, amino acids and higher fatty acids that are found in nature.

Recently, the popularity of mare and camel milk has been increasing everywhere and is used in the treatment and prophylactic direction and baby food.

Camel milk can be used in the treatment of diseases such as AIDS, Alzheimer's disease, hepatitis C, childhood autism, and diabetes mellitus. A mare’s milk is recommended for diseases of the stomach, liver, intestines, skin, for disorders of the immune system, for the treatment of peptic ulcer and respiratory organs.

The speaker told a lot of information about the benefits of eating yogurt, which is an important component of the nutrition of people of all age categories, especially children and adolescents. The development of yogurt technology and the expansion of their assortment are largely carried out through the use of new fortifiers and food additives.

At the moment, a team of scientists from the laboratory, led by Professor T. Tultabayeva, has developed a technology for the production of yogurt based on mare's milk for baby and diet food with vegetable additives. Developed yoghurts with the addition of vegetables are distinguished by good organoleptic, physico-chemical and microbiological indicators, have a uniform consistency, a pleasant and delicate taste with a slight aftertaste of introduced vegetables. These products have repeatedly participated in exhibitions of processing livestock products of the Senate of the Parliament, in forums for agricultural producers and received positive feedback.

The second speaker was the leading researcher at the Laboratory of Technology for Processing and Storage of Livestock Products, PhD Doctor, member of the Council of Young Scientists at the Ministry of Education and Science of the Republic of Kazakhstan, Shoman Aruzhan Yerbolkyzy. She spoke on the topic “Opportunities and Prospects for the Development of Family Farm Mini Dairy”.

Shoman Aruzhan said that the Food and Agriculture Organization of the United Nations (FAO) announced the Decade of Family Farms in 2019, thus noting that family farming contributes to sustainable development and are the main actors in tackling the dual challenge of strengthening food safety and conservation of natural resources. Farms of the Republic of Kazakhstan make a feasible contribution to the creation and sale of agricultural products of the country. Thanks to them, some social problems are solved in providing the rural population with jobs, timely payment of wages, and restoration of unused lands.

“Now we can observe the trend for the family business, in particular for cheese making. I think that the cheese-making boom in Kazakhstan is just beginning, while the first swallows, the first cheese-making enterprises in large cities, are appearing,” - said A. Shoman.

Shoman Aruzhan shared the experience in the preparation of cheeses gained during an internship in the framework of the program of the Central Asian investment project AGROCOMP, where the hosting organization was AZIENDA AGRICOLA DI CASTEL DI GUIDO (Rome). Where Shoman Aruzhan visited both the dairy plants owned by the municipality of Rome, as well as private family farms.

She also outlined how to turn the favorite pastime “cooking cheese at home” into a promising cheese making business, with what types of cheeses it is worth starting, what capital is needed at the initial stage, what equipment is needed and much more. In conclusion, Shoman Aruzhan said that beginning farmers can contact the institute for a full consultation, where they can also take master classes in cheese making.
